JIU's structure is extremely simple. A 1.6mm-thick iron plate, and a wooden slide-on handle.
The greatest invention lies in the shape of the "rim" that runs around the entire edge of the plate. Designed with a proprietary curve, this rim functions as a "docking port" that the handle's sliding mechanism locks firmly into from any of 360 degrees.
There's no need to hunt for a specific mounting hole. When the cooking is done, grab it wherever is convenient, carry it to the table, and slide the handle off. In that instant, what's left in front of you isn't a "rugged frying pan," but simply "a modern black plate."

JIU is not a disposable frying pan with a Teflon coating. It's made of good old-fashioned iron.
Thanks to the "hard tempering process" that manufacturer Fujita Kinzoku takes pride in, the tedious "seasoning" (burning in) typical of iron pans is unnecessary. You can use it the very day it arrives. Sear meat over high heat and the surface comes out crisp while the inside stays juicy. The more you use it, the more the oil works in, until it takes on a deep black sheen and stops sticking.
